Here's how to make it:
Ingredients:
- 3/4 cup fresh basil
- 1/4 cup olive oil
- 1/4 cup cashews
- 1/4 cup nutritional yeast
- 1/4 cup pasta water
- 2 tbsp lemon juice
- 2 garlic cloves
- 1 scoop of Progressive's VegeGreens
- 1 tsp salt
- 1/2 tsp black pepper
- Cooked pasta of choice
Directions:
- Add all of the pesto ingredients to a blender and blend until smooth.
- Add in more water if needed to get to your preferred consistency.
- Pour pesto over pasta, mix, and enjoy!
